Nghiên cứu công nghệ sản xuất bột dinh dưỡng giàu vi chất có bổ sung lyzin cho trẻ em 6-24 tháng tuổi

Bột DDGVC được sản xuất từ nguyên liệu chính là gạo(55%), đậu tương, vừng và premix. Mục tiêu của nghiên cứu nhằm đưa ra công thức bổ sung lysin và hoàn thiện quy trình sản xuất nhằm tạo ra được bột DDGVC có bổ sung lysin từ 1190,25 –1499 trong 100g bột, đáp ứng 50-70% nhu cầu lysin của trẻ. Nghiên cứu sử dụng phương pháp phân tích hàm lượng lysin trong bột trước và sau nấu chín; phương pháp chuyên gia cho điểm theo TCVN 3215-79 để đánh giá cảm quan sản phẩm; xác định thành phần dinh dưỡng, các chỉ tiêu vi sinh của bột ngay sau sản xuất và trong quá trình bảo quản 2 tháng, 4 tháng, 6 tháng bằng phương pháp hoá học và vi sinh; đánh giá sự chấp nhận sản phẩm trên trẻ em 6-24 tháng tuổi và bà mẹ nuôi dưỡng trẻ. Nghiên cứu đã đưa ra công thức bổ sung L - lysin monohydroclorid ở mức 600mg trong 100 g bột ở giai đoạn "phối trộn cấp 1" các nguyên liệu. Sản phẩm bột DDGVC bổ sung lysin sản xuất trên dây chuyền sản xuất tại Viện Dinh dưỡng có chất lượng tốt, hàm lượng lysin đáp ứng 60-73% nhu cầu trẻ, với thời gian bảo quản 6 tháng. Bột được đa số trẻ 6-24 tháng tuổi ăn chấp nhận và hoàn toàn có biểu hiện bình thường sau khi ăn.

Study on technology of lysine fortification in multi- micronutrient enriched powder for children aged 6-24 months old

Abstract:
The multi - micronutrient enriched powder has been produced from rice (61.76%), soya beans, sesame and premix. The aim of study is to find out the appropriate amount of lysine fortified to the multi-micronutrient enriched powder and to finalize the technology process which ensures to reach the final product containing 1190.25 - 1499 mg lysine/100gram product, which is equivalent to 50-70% baby recommended daily allowance(RDA) of lysine. Lysine quantity was determined by HPLC method. The nutrition compositions (protein, lipid, glucid, vitamin A, Ca, Fe, Zn) and microbiology indicators were analyzed by common chemical and microbial methods. The product’s quality was controlled after being produced and after 0, 2, 4 and 6 months of storage. Assessment of acceptability of product was carried out in 200 children and 200 theirs mothers. According to the result of study, the infant food fortified with lysine was produced with 600mg/100gram in “first mixed stage”. The self life of this product is 6 months. The product was accepted by most children aged from 6-24 months.
