Đái tháo đường là bệnh mãn tính, phổ biến và tốn kém, nó ảnh hưởng đến hàng triệu người cả nam, nữ, mọi lứa tuổi, mọi trình độ khác nhau trên toàn cầu. Chế độ ăn là 1 phương pháp điều trị. Những loại thực phẩm ít gây tăng glucose máu sau ăn được khuyên dùng cho bệnh nhân đái tháo đường. Đề tài tiến hành trên 12 đối tượng người khỏe mạnh và 12 bệnh nhân đái tháo đường typ 2 nhằm so sánh mức glucose máu sau ăn hai bánh đường isomalt và saccarose. Phương pháp nghiên cứu dựa trên xác định Glucose máu lúc đói, sau ăn 15, 30,45, 60, 90 và 120 phút. Kết quả cho thấy nồng độ glucose máu sau ăn bánh sử dụng đường isomalt tăng rất ít, tăng từ từ và tăng thấp hơn ở mọi thời điểm (p<0,05) so với bánh sử dụng đường saccarose trên cả đối tượng người bình thường và bệnh nhân. Nồng độ glucose máu sau ăn 2 giờ của bánh sử dụng đường isomalt ở bệnh nhân đái tháo đường typ 2 là 9,18 mmol/l. Kết quả đánh giá cảm quan cho thấy bánh Hura-light được bệnh nhân đái tháo đường typ 2 chấp nhận rất tốt.

Diabetes mellitus is chronic and common disease, affecting millions people, both male and female, every age group and education level on the word. Dietary intake is one of treat methods. The food that make less increased the blood glucose if found to be good for diabetes mellitus patients. This study was carried out in 12 heathy persons and 12 Diabetes mellitus patients type 2 to com-pare the blood glucose level after consuming Hura-light (used isomalt) and Hura (used saccarose). The method: Blood glucose was is determined after fasting, after consuming Hura-light or Hura 15, 30, 45, 60, 90 and 120 minutes. The results showed that blood glucose after consuming Hura-light (used isomalt) increased slowly and very small and lower at any point (p<0,05) compare with that after consuming Hura (used saccarose) among both healthy subjects and Diabetes Mellitus patiens. The Blood glucose level after consuming Hura-light (isomalt) 2 hours was 9.18 mmol/L in Diabetes Mellitus patients group. Besides, the acceptability test showed the Hura-light was acceptable by Diabetes Mellitus patients.
