Mục tiêu: Mô tả kiến thức, thực hành của người chế biến về an toàn thực phẩm tại bếp ăn của một số cơ sở dệt may Miền Bắc.

Phương pháp: Nghiên cứu mô tả cắt ngang tiến hành trên 49 người chế biến làm việc tại 12 bếp  ăn tập thể của các công ty dệt may thuộc 5 tỉnh phía Bắc từ tháng 5/2017 đến tháng 5/2018.

Kết quả: Tỷ lệ người chế biến thực phẩm đạt yêu cầu chung về kiến thức vệ sinh cơ sở, kiến thức người chế biến, kiến thức ngộ độc thực phẩm lần lượt là 60,6%, 49,5%, và 54,4%. Tỷ lệ đạt chung về thực hành an toàn thực phẩm là 90,5%.

Kết luận: Người chế biến thực phẩm có kiến thức hạn chế và thực hành về an toàn thực phẩm khá tốt. Cần tăng cường truyền thông, nâng cao kiến thức, thực hành của người chế biến thực phẩm.

Aims: To describe the knowledge and practice of food handlers on food safety.

Methods: A cross-sectional study was conducted on 49 food handlers employed at 12 collective kitchens at textile companies in 5 northern provinces, from May 2017 to May 2018.

Results: The rate of food handlers meeting the general requirements on basic hygiene knowledge, processor knowledge, and food poisoning knowledge was 60.6%, 49.5%, and 54.4%, respectively. While, 90.5% of food handlers had correct practice.

Conclusion: Food handlers had a limited knowledge and good practices on food safety. It is necessary to strengthen communication to improve the knowledge and practice of food handlers.
