Nghiên cứu được thực hiện nhằm khảo sát ảnh hưởng của hàm lượng maltodextrin (3, 6, 9, 12, 15 và 18% , w/v) bổ sung vào dịch trích thuốc dòi trước khi sấy phun, cũng như điều kiện sấy phun bao gồm: nhiệt độ không khí đầu vào (160, 170, 180, 190 và 2000C) và tốc độ dòng nhập liệu (14, 16, 18, 20 và 22 rpm) đến các đặc tính vật lý và hoạt chất sinh học của bột thuốc dòi thu được. Các thí nghiệm được bố trí riêng lẻ, kết quả tối ưu của thí nghiệm trước làm cơ sở cho việc bố trí ở thí nghiệm sau. Hàm lượng các hợp chất sinh học (anthocyanin, flavonoid, polyphenol và tannin), các đặc tính vật lý của sản phẩm (độ ẩm, hoạt độ nước và kích thước hạt trung bình) sẽ được phân tích đánh giá trong từng thí nghiệm. Kết quả nghiên cứu cho thấy điều kiện sấy phun tối ưu cho dịch trích thuốc dòi là 1800C, tốc độ dòng nhập liệu 18 rpm và nồng độ maltodextrin bổ sung 9% (w/v). Sản phẩm bột thu được có hàm lượng các hợp chất sinh học ở mức cao và các tính chất vật lý đạt yêu cầu cho việc đóng gói và bảo quản.

Abstract

The study was carried out to investigate effect of maltodextrin concentration (3, 6, 9, 12, 15 and 18%, w/v) added in Pouzolzia zeylanica extract before undergoing spray drying process, as well as operation conditions including inlet air drying temperature (160, 170,180, 190 and 2000C) and feed flow rate (14, 16, 18, 20 and 22 rpm) on physical properties and bioactive compounds of obtained powder. The experiments were designed to become individual consecutive studies, in which the results of previous study were used to set up the next study. The bioactive compounds content (anthocyanin, flavonoid, polyphenol and tannin), physical properties of product (moisture content, water activity and mean particle size) will be analyzed and evaluated in experiments. Study results showed optimal spray drying conditions for Pouzolzia zeylanica extract were temperature of 1800C; feed flow rate of 18 rpm and maltodextrin concentration added 9% (w/v). The obtained powder product had bioactive compounds content in high level and physical properties achieved requirements for handling and preservation.tool and easy to assess with highly effective.
