Nhằm đánh giá thực trạng kiến thức, thái độ, thực hành về VSATTP và sử dụng chất phụ gia tại Quảng Bình, một nghiên cứu mô tả cắt ngang được thực hiện trên toàn bộ 164 chủ cơ sở chế biến-kinh doanh thực phẩm (bún, bánh, nem, chả, thịt quay-thịt nướng) tại 3 huyện, thành phố của tỉnh năm 2009 với một bảng hỏi cấu trúc thiết kế sẵn. Kết quả cho thấy chỉ có 51,8% đạt yêu cầu về kiến thức với điểm trung bình là 19,2/37 điểm; 46,9% đạt yêu cầu về thái độ (trung bình 18,0/32 điểm) và 56,1% đạt yêu cầu về thực hành (trung bình 32,5/54 điểm). Tỷ lệ đạt yêu cầu về kiến thức, thái độ và thực hành sử dụng hàn the và phẩm màu đều chỉ ở mức xấp xỉ 50%. Cần thiết phải xây dựng các chương trình can thiệp truyền thông nâng cao kiến thức, cải thiện thái độ, thực hành về VSATTP nói chung và việc sử dụng chất phụ gia trong chế biến thực phẩm.

To assess knowledge attitude and practices on food safety and the utilization of food additives in Quang Binh, a cross-sectional descriptive study was conducted among all 164 owners of food producing shops (noodles, bread, rolls, spring) in three districts and provincial town in 2009 using a structured questionnaire. The results showed that average means of scores for knowledge, attitude and practice were 19.2/37; 18.0/32 and 32.5/54, respectively. Proportions of people who met the minimum required scores for knowledge, attitude and practices were respectively 51.8%; 46.9% and 56.1%. The corresponding number for knowledge, attitude and practices of using borax and food coloring was approximately 50%. It is necessary to develop communication interventions for increasing knowledge, improving attitude and practices regarding food safety in general and utilization of additives in food processing.
