Mục tiêu: Nghiên cứu tiến hành trên 86 đối tượng mắc hội chứng chuyển hóa 55-70 tuổi tại thành phố Bắc Ninh nhằm đánh giá sự thay đổi các chỉ số đường huyết, HbA1c, chỉ số Insulin và HOMA – Insulin (HOMA – IR) trên bệnh nhân mắc hội chứng chuyển hóa sau khi sử dụng gạo lức nảy mầm liên tục trong 12 tuần.

Phương pháp: Thử nghiệm lâm sàng có đối chứng. Nhóm can thiệp (sử dụng gạo lức nảy mầm 100 g/bữa và ăn 2 bữa hàng ngày liên tục trong 12 tuần) và nhóm chứng (không sử dụng gạo lức nảy mầm). Đối tượng được lấy máu tĩnh mạch để xác định chỉ số đường huyết, HbA1c, chỉ số Insulin và HOMA – IR trước và sau can thiệp.

Kết quả: Sau can thiệp, nồng độ glucose máu của nhóm can thiệp giảm nhiều hơn so với nhóm chứng (0,7 mmol/L so với 0,1 mmol/L; p<0,05). Nồng độ HbA1c và chỉ số HOMA – IR của nhóm can thiệp đã giảm xuống thấp hơn so với ban đầu và so với nhóm chứng (p<0,05). Tỷ lệ đối tượng có glucose máu > 5,6 mmol/L có xu hướng giảm nhiều hơn ở nhóm can thiệp, từ 47,5% xuống còn 30,0% (p> 0,05) và ở nhóm chứng là 45,0% và 40,0% (p>0,05). Tỷ lệ đối tượng có HbA1c ≥ 5,6% cũng đã giảm nhiều hơn ở nhóm can thiệp (từ 42,5% xuống 30,0%) khi so với nhóm chứng.

Kết luận: Gạo lức nảy mầm có thể được xem là sản phẩm tiềm năng trong việc hỗ trợ phòng và điều trị các triệu chứng của hội chứng chuyển hóa ở người cao tuổi.

Objective: A controlled clinical trial was conducted on 86 metabolic syndrome patients to evaluate the effect of germinated rice on the fasting blood glucose, HbA1c levels, Insulin and HOMA – Insulin index.

Method: All subjects were divided into 2 groups, including the intervention group (using germinated rice 100 g/meal x 2 meal/day, during 12 weeks) and the control group. The levels of fasting blood glucose, HbA1c, Insulin were measured at baseline and after 12 weeks of the intervention.

Results: Results showed that after 3 months of the intervention, the blood glucose level and HbA1c level decreased significantly in the intervention group (p<0.05). The change in the blood glucose level was higher in the intervention group as compared with that of the control group (0.7 mmol/L versus 0.1 mmol/L; p <0.05). The HOMA- IR index of the intervention group were lower compared to that at baseline and compared to the control group (p <0.05). In addition, the prevalence of subjects with the blood glucose> 5.6 mmol/L and the prevalence of subjects with HbA1c>5.6% had a reducing trend in the intervention group (p> 0.05).

Conclusion: The germinated rice is considered as the potential product to support in the prevention and treatment of metabolic syndrome in the elderly
