Nghiên cứu đã đưa ra quy trình và sản xuất bột cà rốt khô hoàn toàn từ tự nhiên (không có xử lý bằng hóa chất trong quá trình chế biến). Bột cà rốt được đóng trong túi màng phức hợp 3 lớp bảo quản được 4 tháng có chất lượng cảm quan tốt (màu sắc đỏ cà rốt, mùi vị thơm tự nhiên, không có mùi hăng, ngái), đảm bảo chất lượng vệ sinh an toàn thực phẩm theo qui định của Bộ Y tế, có hàm lượng carotene là 98,2mg, hàm lượng chất xơ là 750mg và hàm lượng đường saccaroza là 17g trong 100g bột cà rốt. Với bột cà rốt thu được, nghiên cứu đã hoàn thiện được quy trình công nghệ và sản xuất bột dinh dưỡng giàu vi chất có bổ sung cà rốt. Bột dinh dưỡng được đóng trong túi màng phức hợp 3 lớp, với thời gian bảo quản 4 tháng, được bổ sung them carotene, chất xơ tự nhiên, đảm bảo chất lượng vệ sinh an toàn thực phẩm theo quy định của Bộ Y tế, có chất lượng cảm quan (màu sắc, mùi vị, độ đặc), chấp nhận được bởi các trẻ nhỏ lứa tuổi ăn bổ sung.
From this study, dried carrot powder has been naturally produced (without chemical processing), in which the content of carotene is 98.2mg, of fiber is 750 mg and of saccharoze is 17 g in 100 g of carrot pow-der. The product has shelf- life of 4 months with good perceptible qualities (the red color of carrot, nat-ural flavour, no pungent taste) and it passes the regulation on food safety of the Ministry of Health. From the dried carrot powder produced, the study has finalized the production process for micronutrient enriched flour suppimented with carrot powder, and packed in 3-layer complex package with the shelf- life of 4 months. The product has good perceptible qualities (colour, taste, density). It is supplemented with carotene, and natural fibres.
