thì còn khá mới. Áp dụng những công nghệ của nhiều nước, chúng tôi đã tìm ra
nhiều điều kiện kỹ thuật thích hợp để sản xuất nước cà rốt ở Việt Nam như lựa
chọn nguyên liệu cà rốt (trồng ở Việt Nam) thích hợp nhất cho sản xuất, xác
định các điều kiện chính cho sản xuất...

Chúng tôi hy vọng rằng nghiên cứu này sẽ giúp ích được quý vị hiểu sâu hơn về
cà rốt và tạo ra công nghệ chế biến nước cà rốt ở Việt Nam.
English summary: The production of carrot juice in Vietnam have been selected as
suitable raw materials for producing carrot juice. Several technical conditions
have been found to be applicable in Viet Nam such as: thermal treatment,
combination of different ingredients, homogenization, or sterilization of
carrot juice as the final product on the process selected…From the research results,
some main operations of carrot juice production scheme were formed and can be
applied in Vietnam.
