Tóm tắt tiếng Việt: Fillet cá tra đông lạnh là một trong những sản phẩm có giá trị xuất khẩu cao của ngành thủy sản Việt Nam. Phần thịt vụn loại ra từ quy trình chế biện fillet chiếm khoảng 10% khối lượng cá sống và có giá trị dinh dưỡng thấp (nhiều chất béo, hàm lượng protein không cao). Vì vậy, đề tại “Nghiên cứu chế biến sản phẩm nhũ tương từ thịt vụn cá tra” được tiến hành nhằm nâng cao giá trị sử dụng của phụ phẩm này. Nội dung nghiên cứu bao gồm (i) việc khảo sát ảnh hưởng của ché độ rửa loại chất béo, (ii) xác định chế độ làm chín phù hợp cho sản phẩm được chế biến từ nguyên liệu đã qua xử lý và (iii) sự thay đổi chất lượng của sản phẩm theo thời gian trữ đông. Kết quả thí nghiệm cho thấy, thịt vụn cá tra sau khi rửa 3 lần theo tỷ lệ nguyên liệu: nước là 1: 4 trong nước rửa có nồng độ natribicarbonate 0,15% tạo được khối paste có chất lượng tốt. Làm chín sản phẩm nhũ tương bằng cách luộc ở 95 độ C trong 5 phút cho chất lượng cảm quan tốt nhất. Sau 6 tuần bảo quản ở nhiệt độ - 18 độ C, sản phẩm vẫn đảm bảo an toàn về mặt vi sinh duy trì cấu trúc của sản phẩm.

English summary: Frozen Pangasius fish fillet is one of the highest export value produts of the aquaculture industry in Vietnam. The meat scraps which are eliminated from this fillet production process hold about 10% the total weight of raw material but have a low nutritional value (high in fat, low in protein). Therefore, this study “The factors affecting the removal of lipids for Pangasius fish meat scraps – Application in processing of ready to eat frozen emulsified product” was carried out to explore methods to increase the value of this by product. The objectives of this study are (i) to investigate the influence of washing conditions for reducing the lipid content, (ii) to identify appropriate cooking regime for product that was processed from treated material, and (iii) to identify the quality change of products during frozen storage. Experimental results indicated that Pangasius fish scraps should be frozen at – 15 degree C at least 2 days before processing, then they were washed three times with ratio of raw material: water of 1: 4 in washing water with 0.15% sodium bicarbonate to create the best quality paste. Cooking emulsified product by boiling at 95 degree C in 5 minutes would give the best organoleptic quality. After storing 6 weeks at –18 degree C, products ensured microbiological safety and maintained texture.
