Tóm tắt tiếng Việt: Khoai lang là một loại củ lương thực có chứa hàm lượng tinh bột cao và có sản lượng lớn tại Việt Nam. Tuy nhiên, việc sản xuất các sản phẩm như tinh bột, maltodextrin từ khoai lang nhằm ứng dụng cho các ngành công nghiệp thực phẩm vẫn còn khá hạn chế. Do đó, việc nghiên cứu sản xuất maltodextrin từ khoai lang sẽ góp phần nâng cao giá trị kinh tế cho loại nông sản này. Nghiên cứu này tiến hành khảo sát các điều kiện thích hợp cho quá trình dịch hóa tinh bột khoai lang bằng cách sử dụng các chế phẩm enzyme α-amylase thương mại là Termamyl, SEBstar HTL... Các kết quả thu được cho thấy lựa chọn được chế phẩm enzyme SEBstar HTL sử dụng cho quá trình dịch hóa với các điều kiện thủy phân thích hợp là nồng độ tinh bột 25%, nhiệt độ 900C, pH 6,0; nồng độ enzyme 0,04%, thời gian 30 phút đạt giá trị DE là 6,48, dịch tinh bột thủy phân này được dùng cho quá trình đường hóa ở giai đoạn tiếp theo để tạo ra sản phẩm là Matodextrin.

English summary: Sweet potatoes are a staple food with high starch content and large yield in Vietnam. However, the production of products such as starch, maltodextrin from sweet potatoes FOR food industry is still limited. This study shows the effects of concentration with SEBstar HTL (0.01% - 0.05%), temperatures (75 degree C – 95 degree C), duration (20 - 60 minutes) and pH (5.5 - 7.0) on the process of starch hydrolysis of sweet potato. The optimized conditions of hydrolysis were determined as SEBstar HTL enzyme concentration at 0.04%, temperature at 90 degree C, hydrolysis duration of 60 min and pH of 6.0. This hydrolyzed starch solution can be used for subsequent saccharification and has a DE value of 6.48 and can be used for saccharification at the next stage and has devised a process to produce maltodextrin from sweet potatoes material of Vietnam.
