Quantifying amino acid content in soyabean and its products by HPLC method

Nghiên cứu nhằm xác định hàm lượng của 17 axit amin khác nhau trong đậu tương và các chế phẩm bằng kỹ thuật sắc ký lỏng hiệu năng cao (HPLC) tại Trung tâm kiểm nghiệm của Viện Dinh dưỡng. Kết quả cho thấy, hàm lượng của các axit amin trong đậu tương dao động trong khoảng từ 33 đến 40g/100g. Lượng acid amin trong đậu phụ từ 7 đến 10g/100g, trong sữa đậu nành từ 11 đến 18mg/l. Trong các thực phẩm được phân tích, ngoài axit glutamic có tỷ lệ khá cao thì một số axit amin thiết yếu khác cũng có hàm lượng tương đối cao. Đặc biệt, đậu phụ Mơ có hàm lượng acic amin cao nhất so với các loại đậu phụ khác.

Abstract:
Seventeen different kinds of amino acids were quantified in a study, using high performance liquid chromatography method (HPLC) in the Lab of Food hygiene and food safety control center of the National Institute of Nutrition. The results showed that the content of those total amino acids in soybean is in the range from 33 to 40g/100g. The content of those total amino acids in tofu is in the range from 7 to 10g/100g, and in soybean milk is in the range from 11 to 18mg/l. In the analyzed products, beside glutamate acid with the highest rate, some other essential amino acids also have a high content. Especially, tofu bought in Mo market has the highest content of amino acids compared with tofu in the other markets.
