Tóm tắt

Lecithin thương mại là lecithin có chứa phosphatidylcholine cao được sản xuất từ thực vật, động vật và các nguồn vi sinh vật. Tuy nhiên để sản xuất ở quy mô lớn thì đậu tương là nguồn nguyên liệu chính được chú ý. Trong nghiên cứu này, chúng tôi sử dụng lecithin thô từ quá trình khử nước dầu đậu tương để chuyển lecithin thành phosphatidylcholine. Quá trình phosphatidylcholine hóa sử dụng enzyme thương mại phospholipase D từ chủng Streptomyces chromofucus (Sigma) ở điều kiện: nồng độ enzyme phospholipase D là 0,2U/ml; bổ sung choline chloride 2,5%; pH 5,5-6,5; thời gian phản ứng 40 phút. Hàm lượng PC chuyển hóa đạt 23,8% so với PC ban đầu là 11,5%. Kết quả nghiên cứu cho thấy có thể sử dụng enzyme phospholipase D để sản xuất lecithin giàu phosphatidylcholine ứng dụng trong sản xuất thực phẩm chức năng với nguồn nguyên liệu là hạt đậu tương sẵn có tại Việt Nam.

Abstract

Commercial lecithin normally contains high phosphatidylcholine content and could be originated from plants, animals or microorganisms. However, soybean is the main material source for lecithin production at industrial scale. In this research, raw lecithin obtained from the dehydration of soybean oil will be utilized to be converted into phosphatidylcholine. The phosphatidylcholinization by commercial enzyme namely phospholipase D from Streptomyces chromofucus (Sigma) was done at conditions as phospholipase D concentration of 0.2U/ml; added choline chloride of 2.5%; pH 5.5-6.5; reaction time of 40 minutes. Converted PC content reached 23.8% from the initial PC content of 11.5%. The research result showed that phospholipase D enzyme could be utilized for the production of phosphatidylcholine enriched lecithin from available soybean source in Vietnam.
