Tóm tắt tiếng Việt: Nghiên cứu được thực hiện để khảo sát ảnh hưởng của nhiệt độ sấy, tỷ lệ nước và thịt quả mãng cầu xiêm, nhiệt độ và thời gian trích ly, thời gian và nhiệt độ thanh trùng đến hàm lượng các hợp chất sinh học (phenolic, tannin, flavonoid, alkaloid và saponin) và hoạt động khử gốc tự do DPPH của sản phẩm. Kết quả cho thấy nhiệt độ sấy tối ưu là 850C, tỷ lệ thịt quả mãng cầu xiêm và nước là 1/30 (g/mL), nhiệt độ và thời gian trích ly là 850C trong 45 phút. Dịch trích thu được có màu sắc và mùi vị hấp dẫn, mức độ ưa thích cao và chứa hàm lượng các hợp chất sinh học ở mức cao. Sản phẩm được điều vị và rót vào chai thủy tinh, đóng nắp và tiến hành thanh trùng với nhiệt độ 850C trong thời gian 25 phút, sản phẩm vẫn duy trì hàm lượng các hợp chất sinh học ở mức cao và đảm bảo an toàn về chỉ tiêu vi sinh vật.

English summary: The study was carried out to investigate the effect of the drying temperature; the ratio of water to soursop flesh; the extraction temperature and time; the pasteurization temperature and time on the content of bioactive compounds (phenolic, tannin, flavonoid, alkaloid and saponin), and on the DPPH free radical scavenging activity of product. The results showed that the optimum drying temperature was 85 degree C; the ratio of water to soursop flesh was 30/1 (mL/g); the temperature and extraction time were 85 degree C and 45 minutes, respectively. The obtained extract had attractive color and flavor, high preferred level, and high levels of bio-active compounds. After being flavored and poured into glass bottles, capped and pasteurized at 85 degree C for 25 minutes, the product still maintained high levels of bio active compounds and met safety standards of microbiological criteria.
