The results of a cross-sectional survey conducted from February to April in 2013 on food safety conditions of total 58 kindergarten kitchens in Le Thuy district, Quang Binh province showed that: 72.4% of the kitchens met the requirements for food safety practices, 55.2% met the hygiene requirements for utensils and 39.7% met the requirements for sanitary conditions.

English summary: The results of a cross-sectional survey conducted from February to April in 2013 on food safety conditions of total 58 kindergarten kitchens in Le Thuy district, Quang Binh province showed that: 72.4% of the kitchens met the requirements for food safety practices, 55.2% met the hygiene requirements for utensils and 39.7% met the requirements for sanitary conditions. Of the 34 kitchens with managers trained on food safety knowledge, up to 23 kitchens met the hygiene requirements for utensils, accounting for 67.6%. With 24 kitchens where the manager had not participated in the training, only 9 kitchens met the hygiene requirements for utensils (37.5%), the difference has statistical significance (χ test, p <0.05). Improving knowledge of food safety for kitchen managers and strengthening monitoring activities in accordance with the food safety requirements of the Ministry of Health in the kitchen of kindergarten schools in Le Thuy district, Quang Binh province are essential.

Tóm tắt tiếng Việt: Kết quả điều tra cắt ngang tiến hành từ tháng 2 đến tháng 4 năm 2013 về thực trạng an toàn vệ sinh thực phẩm tại 58 bếp ăn Trường mầm non huyện Lệ Thủy, tỉnh Quảng Bình năm 2013 đã cho thấy: 72,4% bếp ăn đạt yêu cầu thực hành vệ sinh thực phẩm, 55,2% bếp ăn đạt yêu cầu vệ sinh dụng cụ và 39,7% bếp ăn đạt yêu cầu vệ sinh cơ sở. Trong số 34 bếp ăn có bếp trưởng đã được tập huấn kiến thức về an toàn thực phẩm, có tới 23 bếp ăn đạt yêu cầu thực hành vệ sinh dụng cụ, chiếm tỷ lệ 67,6%. Với 24 bếp ăn mà bếp trưởng chưa tham gia tập huấn, chỉ có 9 bếp ăn đạt yêu cầu vệ sinh dụng cụ (tỷ lệ 37,5%), sự khác nhau có ý nghĩa thống kê (χtest, p< 0,05). Nâng cao kiến thức về an toàn thực phẩm cho bếp trưởng và tăng cường các hoạt động giám sát theo các yêu cầu an toàn thực phẩm của Bộ Y tế tại bếp ăn trong các Trường mầm non ở huyện Lệ Thủy, tỉnh Quảng Bình là rất cần thiết.
