Current situation of food hygiene and safety in center markets of Thainguyen city
The study aimed to investigate current situation of ready-to-eat food hygiene and safety in center markets of Thai Nguyen city. A cross-sectional was carried out. The results showed that: The rate of poor knowledge of food salesmen and producers is quite high (20% - 67%). The rate of good practice of food salesmen and producers is quite low (28%). The risk for food pollution from food salesmen and producers is high (64% - 81 %). The high proportion of the borax has found in some ready-to-eat foods (in meat-rolls, lean pork paste... it is from 15.4% to 22.8%).

Thực trạng an toàn vệ sinh thực phẩm chế biến sản tại các chợ trung tâm thành phố Thái Nguyên
Với mục tiêu nghiên cứu thực trạng an toàn vệ sinh thực phẩm chế biến sẵn tại các chợ trung tâm thành phố Thái Nguyên, một nghiên cứu mô tả cắt ngang tại hai chợ Đồng Quang và chợ trung tâm của thành phố Thái Nguyên. Kết quả: Tỷ lệ kém hiểu biết của người chế biến và kinh doanh thực phẩm về an toàn vệ sinh thực phẩm còn cao (20-67%).

Với mục tiêu nghiên cứu thực trạng an toàn vệ sinh thực phẩm chế biến sẵn tại các chợ trung tâm thành phố Thái Nguyên, một nghiên cứu mô tả cắt ngang tại hai chợ Đồng Quang và chợ trung tâm của thành phố Thái Nguyên. Kết quả: Tỷ lệ kém hiểu biết của người chế biến và kinh doanh thực phẩm về an toàn vệ sinh thực phẩm còn cao (20-67%). Tỷ lệ thực hành tốt của người chế biến và kinh doanh thực phẩm về an toàn vệ sinh thực phẩm chưa cao (28%). Chỉ số nguy cơ ô nhiễm của người chế biến và kinh doanh thực phẩm về an toàn vệ sinh thực phẩm cao (64% - 8l%). Tỷ lệ hàn the trong các thực phẩm chế biến sẵn còn cao (như giò, chả...từ 15,4% đến 22,8%).
