Điều tra đánh giá thực trạng vệ sinh thực phẩm tại bếp ăn của 12 trường mầm non thị xã Hà Đông được tiến hành từ tháng 10 năm 2005 đến tháng 1 năm 2006. Tổng số 144 mẫu bao gồm nước uống, thức ăn thu thập tại 12 bếp ăn đã được kiểm tra các chỉ tiêu vi khuẩn chỉ điểm vệ sinh theo quyết định số 867/1998/QĐ-BYT của Bộ Y tế. Kết quả cho thấy không có mẫu thức ăn, nước uống nào bị nhiễm S.aureus, số mẫu đã kiểm tra không đạt tiêu chuẩn vệ sinh chiếm tỷ lệ 37,5%. Dụng cụ phục vụ tại bếp ăn đảm bảo vệ sinh, tuy nhiên số nhân viên có thói quen rửa tay với xà phòng sau khi tiếp xúc với thực phẩm chỉ đạt tỷ lệ 76%. Ngăn chặn ô nhiễm chéo từ thực phẩm tươi sống sang thức ăn chín là vấn đề cần thiết nhằm chủ động đề phòng tiêu chảy cho các cháu ở bếp ăn các trường mầm non.

Abstract:
A cross-sectional study on bacterial contamination of cooked foods available in the canteens of kindergartens in Hadong town was carried out from October 2005 to January 2006. A total of 144 boiled water and cooker food samples collected from 12 canteens were examined for selected microbiological parameters of the Decision No.867/1998/QD-BYT issued by the Minister of Health on hygienic standards. The results revealed that all of the examined water and food samples were free from S.aureus . however 37.5% of the samples did not meet the hygienic standards. Avoiding cross-contamination between raw food ingredients and cooked foods is essential to actively prevent diarrhoeal diseases for children in catering at kindergarten.
