Nghiên cứu của chúng tôi được tiến hành nhằm đánh giá khả năng ức chế của một số loại rau gia vị lên quá trình phát triển và tổng hợp độc tố ruột (enterototoxin) của Staphylococcus aureus. Khả năng ức chế của các loại rau gia vị lên quá trình phát triển và tổng hợp các độc tố ruột của chủng S.aureus ATCC 25923 được xác định bằng phương pháp nuôi cấy trên môi trường lỏng, độc tố được định lượng bằng kĩ thuật ELISA. Kết quả cho thấy cả bốn loại rau gia vị đều có tác dụng ức chế lên quá trình phát triển và tồng hợp độc tố ruột. Tỏi có tác dụng ức chế mạnh nhất, tiếp đến là diếp cá; ngải cứu có khả năng ức chế trực tiếp lên quá trình tổng hợp độc tố ruột. Tác dụng này tăng theo nồng độ dịch chiết và thời gian nuôi cấy.

Abstract:
The study aims to determine antibacterial effects of several herbal plants on the growth and toxin production of S.aureus. Antibacterial activity of four herbal plants: Houttuynia cordata, Mentha species, Artemisia vulgaris car.indica and Allium sativum, was exam-ined against a reference strain (S.aureus ATCC 25923) using a novel microtiter plate method. In addition, some attempts were made to investigate the effects if the various herbal extracts on the production of SEA by ELISA. All herbal extracts showed growth inhibition of S.aureus ATCC 25923 at 2 hours onwards when cells were treated with garlic and at 3 hours in the wells when treated with the other herbs. The inhibition increased by an increase in the concentration of herbal extracts, and also by the length of incubation time.
