Một phương pháp với độ chọn lọc cao và độ nhạy cao đã được phát triển để xác định hàm lượng Chloropropanols bao gồm 1,3-Dichloropropan-2-ol (1,3-DCP) và 3-Chloropropan-1,2-diol (3-MCPD) trong nước tương và tương đặc. Mẫu được đồng nhất và trộn với dung dịch natri clorua bão hòa sau đó cho hấp thụ lên cột kielselgurh. Các chất này được chiết bằng diethyl ether và tạo dẫn xuất với heptafluorobutyric acid anhydrid. Các dẫn xuất được tách bằng sắc ký khí mao quản, phát hiện và định lượng bằng detector khối phổ. Độ chính xác đạt được khá tốt với RSD% là 3-9%, độ thu hồi tính trên mẫu thêm chuẩn trên 90%. Giới hạn định lượng là 10 mg/kg, đáp ứng yêu cầu của các tổ chức trên thế giới. Phương pháp này đã được ứng dụng để phân tích 3-MCPD và 1,3-DCP trong các loại nước tương và tương đặc trên địa bàn Hà Nội. Kết quả cho thấy sự có mặt của 3-MCPD và 1,3-DCP trong các loại nước tương sản xuất trong nước với nồng độ cao hơn các loại nước tương nhập ngoại. Nồng độ 3-MCPD cao nhất là 116 mg/kg. Ngược lại, các loại tương đặc bao gồm tương bần truyền thống của Việt Nam không phát hiện thấy 3-MCPD và 1,3-DCP.

This paper reports the development of a highly selective and sensitive method for the determination of parts-per-billion level of chloropropanols consisting of 1,3-dichloropropan-2-ol (1,3-DCP) and 3-chloropropane-1,2-diol (3-MCPD) in soy sauce and thick soy sauce. Samples were homogenised, being mixed with saturated sodium chloride solution and then being adsorbed on kielselgurh columns. The chloropropanols were extracted from columns with diethyl ether and derivatised with heptafluorobutyric acid anhydride. The derivatised analytes were separated by capillary gas chromatography, identified and quantified by mass spectrometry. Precision of the method was satisfactory at RSD% about 3-9%, and recoveries of 1,3-DCP and 3-MCPD from soy sauce samples spiked were over 90%. The limit of quantitation of the method was found to be about 10 mg/kg, meeting the requirements of tolerance limits adopted by different international institutions and governments around the world.
