Nghiên cứu xác định thành phần acid béo của 42 thực phẩm được lựa chọn từ danh sách các thực phẩm cung cấp nguồn lipid chính trong khẩu người trưởng thành tại 8 tỉnh thuộc 4 vùng sinh thái khác nhau ở Việt Nam đã được tiến hành trong năm 2009 tại khoa Thực phẩm – Vệ sinh an toàn thực phẩm, Viện Dinh dưỡng. Kết quả phân tích lipid tổng số, thành phần acid béo bão hòa, acid béo không bão hòa, Omega-3 và Omega-6 trong 120 mẫu thực phẩm cho thấy, chất béo của thịt lợn là nguồn lipid chính trong khẩu phần. Hàm lượng acid béo không bão hòa Omega-3 cao nhất ở lạc và Omega-6 cao nhất ở vừng. Tỷ lệ acid béo không bão hòa trong lipid tổng số đạt mức cao ở các loại cá như cá thu (81,27%), cá chép (58,6%) và một số thực phẩm nguồn thực vật như đậu phụ (72,9%), vừng (72,8%), lạc (72,0%). Kết quả của nghiên cứu này đã cung cấp các số liệu có cơ sở khoa học về thành phần acid béo trong thực phẩm để đề xuất lời khuyên dinh dưỡng hợp lý.

A study to determine fatty acid content in 42 food items selected from the list of foods that are the major sources of fat in the diet of adults from 8 provinces belong to four different geographic regions in Vietnam was conducted in 2009 at the Department of Food Science and Food Safety of the National Institute of Nutrition (NIN) in Hanoi, Vietnam. The analysis results of total fat, saturated fatty acids, unsaturated fatty acids, Omega-3 and Omega-6 contents in 120 food samples showed that, fat of pork is the main source of fat in the diet. The content of unsaturated fatty acid Omega-3 is highest in peanuts and that of Omega-6 is highest in sesame. The proportion of unsaturated fatty acids in total lipid is at high levels in fish such as mackerel (81.27%), carp (58.6%) and a number of plant food sources such as tofu (72.9%), sesame (72.8%), and peanuts (72.0%). Results of this study have provided data on fatty acid contents in foods that become the scientific evidence to develop proper nutrition guidelines.
