Đề tài tiến hành nhằm xác định và so sánh mức đường huyết sau ăn bánh trung thu sử dụng đường Isomalt và bánh trung thu truyền thống sử dụng đường Saccarose. Thử nghiệm lâm sàng có đối chứng được tiến hành trên 10 đối tượng khoẻ mạnh, tuổi 20-40, 3 đợt, mỗi đợt cách nhau 7 ngày: Đối tượng được ăn bánh trung thu có đường Isomalt, uống đường Glucose, và ăn bánh trung thu truyền thống có sử dụng đường Saccarose. Glucose máu được định lượng vào lúc đói, sau khi ăn 30, 60, 90 và 120 phút. Kết quả cho thấy chỉ số đường huyết của bánh trung thu có sử dụng đường Isomalt là 21% so với đường Glucose; bánh có sử dụng Isomalt làm tăng Glucose máu sau ăn rất ít và từ từ so với ăn bánh trung thu truyền thống sử dụng Saccarose và uống đường Glucose tại tất cả các thời điểm (p<0,05). Như vậy, sản phẩm có đường Isomalt sử dụng tốt, có hiệu quả trong việc kiểm soát Glucose máu, do đó sản phẩm có đường Isomalt có thể dùng cho bệnh nhân đái tháo đường, rối loạn dung nạp Glucose máu. Cần có các nghiên cứu tiếp theo về Isomalt trong các thực phẩm chế biến sẵn khác.

Abstract:
The study was conducted to determine and compare blood Glucose level after consuming moon cakes using Isomalt and moon cakes using Sucrose. A controlled and clinical trial was carried out on 10 healthy adults. This trial was divided into 3 periods, one 7 days after the other. All subjects were consumed moon cakes with Isomalt, Glucose, and moon cake with Sucrose. Blood Glucose level was determined at fasting point, after consuming moon cakes or glucose 30, 60, 90 and 120 minuses. The results showed that the blood glucose index of moon cakes with Isomalt is 21% compared to that with Glucose. The moon cakes with Isomalt made the increasing of blood Glucose level slowly and very little comparing with the moon cakes with Sucrose at the points of 30, 60, 90, and 120 minutes after consuming the moon cakes (p<0,05). Therefore, food product with Isomalt is good for control of blood Glucose level; it can be used for the diabetes mellitus and blood Glucose disorder persons. Further studies on other food products using Isomalt are still needed.
