Nghiên cứu xác định các thông số kỹ thuật và tuyển chọn chủng vi khuẩn lactic thích hợp cho quá trình nảy mầm của đậu nành. Sử dụng đậu nành giống DT96 và các chủng vi khuẩn L. plantarum, L. casei, L. reuteri, L. acidophilus. Tiến hành ngâm, ủ đậu nành ở các nhiệt độ và thời gian khác nhau. Bổ sung các chủng vi khuẩn lactic vào quá trình ủ nảy mầm. Phân tích hàm lượng của đậu nành sau nảy mầm để tìm chủng vi khuẩn lactic và tỷ lệ bổ sung thích hợp. Kết quả xác định được thông số thích hợp cho quá trình nảy mầm của đậu nành như sau: nhiệt độ ngâm 300C, thời gian ngâm 6 giờ, nhiệt độ ủ 350C, thời gian ủ 33 giờ. Bổ sung chủng vi khuẩn lactic L. plantarum với tỷ lệ bổ sung 6% (v/w) so với khối lượng đậu nành đã ngâm giúp làm giảm hàm lượng axit phytic trong đậu nành nảy mầm hiệu quả nhất, giảm 57% so với hạt ban đầu.

Summary:

The study determined the technical specifications and selection of lactic acid bacteria suitable for germination of soybean. Soybean varieties DT96 and strains L. plantarum, L. casei, L. reuteri, L. acidophilus were used. The soybeans were soaked and incubated at different temperatures and in different time periods. Lactic acid bacteria were added in germination stage. Analysis of the phytate of soybeans after germination was done to detect lactic acid bacteria and determine adding rate suitable for germination. Results: appropriate parameters determined  for the germination of soybean as follows: soaking temperature was 300C, soaking time was 6 hours, incubation temperature was 350C, incubation time was 33 hours. Added strains of lactic acid bacteria L. plantarum with the adding proportion of 6% (v/w) compared to the weight of soaked soybean reduced the amount of phytic acid with the most effective germination down to 57% compared to initial seeds.
