Effects of washing and cooking methods on lost levels of zinc & iron in cooking rice have been investigated in 10 families, belonging to 6 ethnics (San chi, San diu, Nung, Tay, Hoa, Kinh), using 5 kinds of cooking pant/pots (cast iron, aluminum pan (Hai phong), soil pot, copper pot, and electric cooker).

Anemia in pregnant women is one of the most important community health issues. A quasi-experimental intervention study on 118 pregnant women was carried out to determine the anemia status of 13-24 week pregnant women before and after 12 weeks of iron/folic acid supplement in Thai Binh.
The objective of this study is to validate ion chromatography method for the determination of Na, K, Mg and Ca in food. Food items were selected from the list that have no data in the Food Composition Table. The food samples were ashed and then diluted by chlohydric acid prior to the quantification of minerals using cation exchange chromatography.

From the 19 th century, many biologists revealed the secular trends to increasing adult height in most European countries. This phenomenon defined by the fact that the average value of height and weight of the young generation is higher than their parents and the age to get the maximum value come sooner.
An intervention study was conducted on 30 overweight/obesity adults aged 40-59 who were working at offfices, Dong Da District, Hanoi with aiming to assess the effect of the counselling on diet and physical activity to nutritional status and blood chemibiological indices of overweight/obesity adults.

The pilot study has developed the formula and production process for Pepsin fortified with Vitamin B1 in 2 forms: tablet and capsule. Using intensive deterioration method for evaluation, it is found that the 2 forms has qualified stability in both microbiology indicators and protein destruction during its preservation.
Prevalence of obesity is increasing in primary school children in big cities. Obesity poses a major risk factor for non-communicable diseases such as cardiovascular disease, diabetes mellitus, gall-bladder diseases, cancers, which affect people’s health and life-expectancy.
Objective: To evaluate the efficacy of early de-worming and multi-micronutrient supplementation on stunting children who are Pakoh and Van Kieu ethnics in Quang Tri province. Methods: A cluster randomized, controlled clinical trial was conducted among 284 stunting children, in which had 141 worm infection.
Aims: To describe the knowledge and practice of food handlers on food safety. Methods: A cross-sectional study was conducted on 49 food handlers employed at 12 collective kitchens at textile companies in 5 northern provinces, from May 2017 to May 2018.
A cross sectional study was carried out with WHO standard of malnutrition measure to describe nutrition situation of children under 5 year of age in the coastal area of Nghe An from June to August 2011. The results show that: underweight malnutrition account for 18.9%; of which 16.6% and 2.3% belong to mild and severe underweight respectively.
The study was conducted with total 250 restaurants located in Hai Ba Trung district, Ha Noi during the year of 2013. The research used cross-sectional survey with prepared checklist.

Iron deficiency anemia is still a common public health concern in several regions of Vietnam. The prevalence is high in pregnant women and one of effective interventions is iron supplementation. This study aims to investigate knowledge and practices on nutrition and anemia prevention of pregnant women from Muong minority group, as well as relevant factors affecting iron supplementation scheme, from which to develop an effective intervention program for this target group.

Objective: To develop a method to detect curcumin concentration in health supplement by high performance liquid chromatography with a photodiode array detector. Method: Curcurmin was extracted by sonication in methanol for 30 min and separated by a reversed phase C18 column using a mobile phase including buffer, methanol and acetonitrile.

The clinical trial was conducted in adults, who are overweight/obese. It is evident that the weight reducing milk is safe, convenient and has no side effects. After 6 weeks of trial, the product had the efficacy of reducing weight, which is 5.9% of average body weight (3.9kg).
Several factors that influence histamine content in scad products were investigated in a cross sectional study in Thanh Hoa province in 2012. Histamine levels were found from 0.28mg/kg to 1665mg/kg in fresh scads and from 0.08mg/kg to 241mg/kg in processed scads. The histamine content depends on the type of scad, duration from purchasing to processing, the storage conditions, and primary-processing procedures.
