Đánh giá cảm quan và thị hiếu của sản phẩm VIAMINOKID theo phương pháp
tính điểm trên 100 bà mẹ tại 2 xã Tân Hoa và Giáp Sơn, Lục Ngạn, Bắc
Giang. Đánh giá tính chấp nhận của sản phẩm trên 102 trẻ 1-3 tuổi khỏe
mạnh tại 2 xã Tân Hoa và Giáp Sơn, Lục Ngạn, Bắc Giang, mỗi trẻ uống 2
gói/ngày trong 10 ngày, theo dõi và đánh giá số lượng tiêu thụ cùng các
dấu hiệu bất thường. Kết quả:
Sản phẩm cốm giàu axit amin và vi chất dinh dưỡng VIAMINOKID có tỷ lệ
thích về màu là 97,5%; tỷ lệ thích về mùi là 70,6%, tỷ lệ chấp nhận về
vị là 55,5%. Đồng thời, sản phẩm VIAMINOKID có tính chấp nhận cao ở trẻ
1-3 tuổi, 100% trẻ ăn hết lượng 2 gói/ngày trong 10 ngày. Kết luận:
Sản phẩm giàu acid amin và vi chất dinh dưỡng VIAMINOKID đã có điểm cảm
quan cao về màu và mùi và được sự chấp nhận cao khi sử dụng. Cần tiếp
tục nghiên cứu hoàn thiện về vị của sản phẩm VIAMINOKID và ứng dụng sản
phẩm cho trẻ phòng chống suy dinh dưỡng thấp còi.
English summary: Objective:
The study was conducted to evaluate organoleptic properties and
acceptability of granulated nutrition product rich in amino acids and
micronutrients (VIAMINOKID) in the community. Methods:
The evaluation of organoleptic properties (color, smell, taste) of
VIAMINOKID was carried out on 100 mothers at Giap Son and Tan Hoa
commune, Luc Ngan district, Bac Giang province. The acceptability of
VIAMINOKID product was evaluated on 102 healthy children aged 1-3 in
these 2 communes. Each child took 2 sachets a day for 10 days. Results:
VIAMINOKID was accepted by 97.5% in terms of color; 70.6% in terms of
smell and 55.5% in terms of taste. VIAMINOKID product was highly
accepted by children 1-3 years of age, 100% of children consumed 2
sachets/day for 10 days. Conclusion:
The product rich in amino acids and micronutrients - VIAMINOKID had
high organoleptic score for color and smell and high acceptability level
of children 1-3 years. Further research needed to improve the taste of
VIAMINOKID products.
