About 2500 years ago, Hypocrates considered food as medicine and vice verse. In Vietnam Hai Thuong Lan Ong, Tue Tinh and other leading experts in nutrition, biology, agriculture, medicine, food culture, and dietetics have also confirmed the importance of greens in daily meals of the Vietnamese population.
The study was conducted to determine and compare blood Glucose level after consuming moon cakes using Isomalt and moon cakes using Sucrose. A controlled and clinical trial was carried out on 10 healthy adults.
In a cross-sectional survey among 2783 laborers working in 5 vocational village groups in 3 provinces of Thai Binh, Nam Dinh and Hai Phong, it is found that Pignet index of those subjects is quite good (healthy people took 66.4%), males are healthier than females, those working in salt production and sea fishing are healthier than other occupations/ Overweight/obese rate is 17%, higher in salt producers (20.0%) and fishermen (24.0%), and lowest in tobacco planters (16.2%) with p<0.05...
Nutrition has been shown to play significant roles in treatment. In particular, patients with moderate or severe malnutrition need strict nutrition therapy to improve outcomes. In order to assert the roles of nutritional work in hospital, we studied the effects of nutrition therapy on moderately and severely malnourished patients who had received nutritional consultation at Nguyen Tri Phuong Hospital.
A descriptive cross-sectional study was conducted in order to assess the current situation of using borax in some common foods and knowledge, attitude of food producers , traders and consumers about borax in 5 communes of Thai Binh city. 150 samples were divided into 6 food groups; 150 producers and traders, and 281 consumers were interviewed about the using of borax in 6 food groups.
The study determined the technical specifications and selection of lactic acid bacteria suitable for germination of soybean. Soybean varieties DT96 and strains L. plantarum, L. casei, L. reuteri, L. acidophilus were used. The soybeans were soaked and incubated at different temperatures and in different time periods.
A random cross-sectional survey was conducted on 1263 children between 1-36 months of age in 9 communes of 6 provinces in the Northern mountainous areas, including Thai Nguyen, Ha Giang, Lang Son, Son La, Hoa Binh and Lai Chau, with the typical ethnic communities: San Diu, Mong, Tay, Thai, Giay, Muong, and Kinh from June 1994 to November 1996 in order to identify the prevalence of rickets in children.
The study was conducted in 165 type II diabetes patients who have been treated in Thai Binh Preventive Health Center. The results showed that the prevalence of diabetes was higher in males than in females with p<0.05.

This specific study is part of the final evaluation of the project to evaluate the project’s results in improving capacity at grass-root level.

We studied the infection of E.coli β-lactamase enzyme broad spectrum (ESBL) in some foods sold in two markets of Nguyen Xa commune and one district market of Vu Thu. The results showed that 113 out of 173 food samples had E.coli infection producing ESBL; 36 out of 41 chicken samples tested were positive for ESBL, 22 out of 48 pork samples were positive for ESBL, 28 out of 44 fish sample and 27 out of 40 shrimp samples were positive for ESBL.
A cross-sectional study on 300 mothers, who had normal delivery at the Obstetric Department of Hung Yen General Hospital and their newborns was carried out from October to December 2003. The findings showed that: Average birth weight and birth length were 3,090 grams and 49.5 centimeters, respectively.

By conducting a cross-sectional study on street food providers, food processing materials and street foods, results revealed that the contaminated street food with microbiology at Thanh Hoa city during 2007-2008 were at serious levels, especially fermented pork roll and lean pork paste. Which were much consumed.
