Oxidized low density lipoprotein (LDL) is considered a risk factors for atherosclerosis, and polyphenols are the potenial agents to inhibit the oxidation of LDL. We have identified the polyphenol contents and the antioxidant activities of 12 kinds of herbs in Vietnam.
Recently the Ministry of Health and Welfare, Republic of Korea, announced the “Dietary Guidelines for Korean Adults (DGKA),” which includes ten Dietary Goals, six Dietary Guidelines, and twenty-three Action Guidelines. DGKA are developed as the revision of the 2003 Dietary Guidelines for Koreans, targeting adult population.
Support to improve nutritional status and health through measures to ensure water safety is the involvement of communities in three rural communes of Vietnam (Swan Project) conducted by the Institute of Nutrition and Institute International Life Science Center Japan to enhance health (ILSI Japan CHP), with funding support from the Organization Japan International Cooperation Agency (JICA) under development partners program (JPP).
The study analyzing nutritional values of 27 traditional food producted from rice, glutinous rice, flour, peanuts, millet, green bean and sugar, which are commonly consumed in Vietnam, was conducted from April to December 2006.

A cross sectional study in 992 high-ranking officers of Antiaircraft- Air Force Arm in September 2007 showed that: The rate of overweight and obesity was 55.8%. The rate of overweight-obesity of men was higher than women. Waist/ Hip ratio (WHR) > 0.90 of men was 34.3%, (WHR) > 0.85 of women was 30.7%.

The RDA for Vietnamese 2007 has been developed based on the lattest knowledge of nutrition sciences. It has been updated with more appropriate information according to the changes in food consumption and morbidity pattern currently.
A screening of 28 plants used for making drinks in Vietnam revealed a Cleistocalyx operculatus (Roxb.) Merr and Perry flower bud extract to have the high polyphenol content and the highest inhibitory activity against the a-glucosidase enzyme. The anti-hyperglycemic effects of an aqueous extract from flower buds of Cleistocalyx operculatus (COB) were therefore investigated in the animal and the healthy human subjects.
Objectives: To assess the effects of MILO (Nestle) micronutrient-fortified malted milk beverage on physical and cognitive performance of primary school children living in rural Vietnam. Methods: 4 classes of 7-8 year old primary school children (~30 children/class) were randomly assigned to two groups: MILO group (MILO, n=59): children received MILO drink 150 ml/day; Control group (CTR, n=59): children received full-cream milk 150 ml/day.
Objectives: A cross sectional descriptive study was conducted on 30 children aged 7 – 60 months and their mothers in Quai To and Tenh Phong communes. Tuan Giao district, Dien Bien province, to describe the diet of the children and knowledge and practices on child care of their mothers.
Study done in 2007-2008 to estimate calcium requirement and recommended dietary allowance (RDA) for calcium in postmenopausal Vietnamese women aged from 55- 65 years, using calcium balance method. Total of 14 postmenopausal women participated in study. Each participant was subjected to a low calcium intake (300 mg/ day) for 15 days.

From this study, dried carrot powder has been naturally produced (without chemical processing), in which the content of carotene is 98.2mg, of fiber is 750 mg and of saccharoze is 17 g in 100 g of carrot pow-der. This is a cross-sectional de scriptive survey in a selected commune with representative sample of mothers with children under 2 and children under 5.
Though food security is observed nationalwide, there is still a risk of food shortageat households in some disadvantaged areas of Vietnam. The risk has been predicted and reported increases as a consequences of climate changes and financial crisis globally.
Aims: To describe actual food intake of women aged 40-65 years with BMI ≥ 23 kg/m2 in Hanoi, 2016. Methods: A cross sectional study was conducted on women aged 40-65 years with BMI ≥ 23 kg/m2 in Hanoi, 2016. Results: The average age was approximately 52 years old with BMI= 25.6±3.8 kg/m2. The dietary energy level of the study subjects was 1628 (1589,2; 1705,5) kcal /person/day.
Fast food consumption has been rising rapidly among youth in Vietnam. This study was conducted to: 1) Determine the frequency of fast food/beverage consumption among the Vietnamese aged 15-25 years; and 2) determine the availability of fast food/processed food at households during and before COVID-10 pandemic in rural and urban areas in Hanoi City.
A cross-sectional study with the sample size of 11,927 children and adults, who visited the Nutrition Counseling Center during the period 2004 – 2005, gave the following results: Characteristics of children's morbidity: The majority of children visted the center were from 6 to 24 months old, accounted for 52.3%, in which boys was 53.3%, higher than girls, 46.5%.
The aim of this research is to study the antimutagenic activity of sticky rice cooked with various fruits, vegetables and legumes. Fruits and vegetables rich in carotenoids including ivy gourd leaves, the fruit from Momordica cochinchinensis and pumpkin, two kind of legumes mungbean and black bean E and sticky rice colored by being cooked with these fruits, vegetables and legumes were sequentially extracted with n-hexane and 80% ethanol.
The study was conducted on 1,657 women from 40 to 65 years old in 6 wards and communes in 3 areas of Thai Binh province. These women are measured humerus and tibia density by Osteoporosis ultrasound scan ALOKA (Japan) and were evaluated osteophenia rate. The results of the study have shown that: In radius: Average T-score: is -1.19±1.7, the rates of osteophenia and osterporosis are 29.9% and 20.8%, respectively.
